Shiitake means 'oak mushroom' in Japanese. The method of cultivating shiitake on logs is a centuries old tradition, which produces beautiful mushrooms with an extra deep flavour and meaty texture. The process takes a year before harvest and is labour intensive - you just need to taste the mushroom to understand it's worth it.
